Mandarin and Almond Cake

Ingredients

3 mandarins
1 cup oil
4 eggs
1 cup raw sugar
4 cups plain flour sifted
125 g almond meal
2 tsp bicarbonate of soda
1 tsp salt
1 tbs milk

Directions

Simmer whole mandarins, covered with water, until soft. Puree whole mandarins in food processor or blender. Place in large bowl, add remaining ingredients. Mix until well blended. Add small amount of milk or fruit juice if mixture is a bit stiff. It should be loose without being too wet.

Pour into a 33 cm x 27 cm greased and lined baking dish or two large loaf pans. Bake at 180C for approximately 50 - 60 minutes. Cake is cooked when sides shrink from pan and skewer comes out of middle clean. Allow to cool before turning out of pan. Can be left plain or iced with cream cheese icing.

I've enjoyed using vegetables I haven't cooked with before (the kohlrabi and celeriac) and the mixed salad leaves have been absolutely delicious - the best I've ever had.
