Green Beans With Miso Dressing

Ingredients

1/4 cup white miso paste
1/4 cup warm water
2 tsp caster sugar
2 tsp apple cider vinegar
300g green round beans, trimmed

Directions

Combine miso paste, water, sugar and vinegar in a small bowl. Bring a saucepan of salted water to the boil. Cook the beans for 3 minutes or until bright green and tender crisp. Drain and refresh under cold running water. Transfer to a large bowl. Add the miso dressing and toss to combine.

I've enjoyed using vegetables I haven't cooked with before (the kohlrabi and celeriac) and the mixed salad leaves have been absolutely delicious - the best I've ever had.
